Equipment
- 1 9" by 13" baking dish
Ingredients
- 1 stick unsalted butter 113g, save 2 tbsp to brush on top of cobbler
- 3 cups rotisserie chicken shredded
- 2 cups mixed frozen veggies 340g, 12oz
Gravy
- 2 cups low-sodium chicken broth
- 1 can condensed cream of chicken soup 284ml, 10oz
Biscuit Topping
- 1 box Red Lobster Cheddar Bay Biscuit 322g, 11.36oz
- ½ cup cheddar cheese shredded
- 2 cups milk
Instructions
- Pour melted butter in baking dish (Note 1).
- Sprinkle on the shredded chicken, then layer it with frozen mixed veggies.
- In a medium bowl, mix in cream of chicken and chicken broth. Layer this gravy on top of the veggies.
- To a medium bowl, mix the biscuit mix, milk, and cheese together until well combined. Layer the biscuit batter on top of the gravy mixture (Note 2).
- Place into oven preheated to 350℉ (180℃) for 50-60 mins or until the biscuit topping is golden, crispy brown. Once baked, let the cobbler cool down for 10 mins.
- Melt 2 tbsp of butter and mix with the garlic herb powder packet that comes in the biscuit mix. Brush the garlic butter on top of the cobbler.
- Serve immediately while warm and enjoy with a side salad!

- Cut 3/4 of the butter stick to melt, save the rest (2 tbsp) to melt, mix with the garlic herb packet, and brush on top of the cobbler at the end.
- Pour the batter in the bowl on top of a large spoon, and move the spoon around the pan until all the batter is well dispersed. This spoon acts as a buffer so it doesn’t mix with the gravy, and will yield a crispy biscuit topping once baked.
