What is Chicken Cobbler?

Chicken cobbler is an easy and hearty dish that consists of shredded rotisserie chicken, frozen vegetables, topped with a layer of Red Lobster Cheddar Bay Biscuit! The entire dish is then baked in the oven until the cobbler topping is golden brown

It’s similar in concept to a chicken pot pie but with a cobbler-style topping instead of a traditional pastry crust.

The result is a comforting and hearty one-dish meal with a biscuit-like topping that pairs well with the savoury rotisserie chicken and vegetable filling.

Chicken cobbler can be customized with different vegetables, herbs, and spices to suit your taste preferences. It’s a delicious and satisfying comfort food that’s perfect for a cozy dinner.

Where did the Chicken Cobbler Originate?

The chicken cobbler became viral on TikTok by yourbarefootneighbour, but I’ve tweaked the recipe to make it taste even better!

Chicken cobbler, like many regional and comfort food dishes, has been made by home cooks for generations, and its origins can be traced to the American South. It likely evolved over time as a variation of other similar dishes like chicken pot pie.

Now let’s get Chicken Cobbler-ing!

What is a Cobbler?

A cobbler is a delightful and comforting dessert (or savoury dish) that’s all about simplicity and rustic charm. It’s like a warm, cozy hug for your taste buds.

At its heart, a cobbler consists of juicy, fruit (or savoury) filling, nestled beneath a layer of tender, biscuit-like dough. The magic happens when it bakes in the oven, as the dough turns beautifully golden and slightly crispy, while the filling simmers away, creating a luscious, sweet or savoury sauce.

Cobblers are versatile, making them perfect for showcasing the best of any season’s produce or serving as a hearty, one-dish meal. You can craft sweet cobblers bursting with fresh berries, peaches, or apples, or dive into the savoury realm with options like chicken, beef, or vegetable cobbler.

Whether you’re a dessert lover or a fan of savoury comfort food, cobbler has something to offer. It’s a cherished classic that’s easy to prepare and even easier to enjoy, making it a timeless addition to your recipe collection.

What does Chicken Cobbler taste like?

When you first take a bite, you get the umami and heartiness of the rotisserie chicken and creamy sauce, marrying the light, airy decadence of the biscuit topping. Then you chew a little, and you get a hint of sweetness, earthiness, and refreshing crunch from the mixed vegetables.

Chicken cobbler is a taste sensation that marries savoury comfort with a touch of rustic elegance. Imagine tender, succulent pieces of rotisserie chicken enveloped in a creamy and flavourful sauce, where every bite is a harmonious blend of rich, hearty goodness.

But the true star of the show is the cobbler topping. Picture a golden brown, slightly crisp layer of biscuit-like dough that’s simultaneously buttery, flaky, and comforting. It’s a perfect counterpart to the savoury filling, creating a textural contrast that’s simply divine.

Chicken cobbler is a satisfying and soul-soothing dish that’s perfect for a cozy family dinner. Its taste is a harmonious blend of savoury and comforting, making it a timeless favourite for those who appreciate the pleasures of homemade, hearty cuisine.

How to make Chicken Cobbler

To a baking dish, layer on butter, chicken, and vegetables

Start by drizzling the velvety, melted butter into the baking dish. The melted butter not only imparts a rich, savoury flavour but also helps prevent sticking and adds a touch of indulgence to the cobbler’s topping. As it cascades over the dish, you’ll notice a subtle aroma that promises a comforting and flavourful bite.

Next, shred 2 chicken breasts and 1 leg into small pieces. Scatter the tender shreds of rotisserie chicken over the melted butter. The chicken, already infused with delicious rotisserie seasonings, becomes the heart of the cobbler, offering a protein-packed, succulent core. It pairs beautifully with the buttery layer below, promising a hearty and flavourful filling.

As the chicken settles in, sprinkle the colourful medley of frozen mixed veggies over the top. These veggies not only add vibrant hues but also bring a burst of freshness to the dish. The contrast between the warm, savoury chicken and the crisp, frozen veggies promises a delightful textural interplay and ensures your cobbler is brimming with flavours from garden-fresh goodness.

Pour chicken gravy mix on top

In a bowl, combine the creamy goodness of cream of chicken soup with the wholesome, savory notes of low-sodium chicken broth. This step is where the magic truly happens.

The cream of chicken soup brings a velvety, comforting richness, while the low-sodium chicken broth infuses it with a delectable chicken essence. This combination ensures your cobbler is perfectly balanced – not too salty, just the right amount of creamy.

With your gravy ready, carefully pour it over the vibrant veggies. The gravy cascades, seeping into every nook and cranny, bathing the vegetables, and embracing the tender chicken below.

This not only ensures that your cobbler remains moist and flavourful but also creates a delectable saucy surprise in every bite. Your chicken cobbler is now on its way to being a symphony of comforting, savoury flavours.

Gently layer biscuit batter on top

In a mixing bowl, combine the Red Lobster Cheddar Bay Biscuit mix with the milk and a generous helping of shredded medium cheddar cheese.

While the original TikTok video may not have included the cheese, I firmly believe that cheddar cheese is the soul of a Cheddar Bay Biscuit.

It’s the ingredient that gives these biscuits their iconic savoury, cheesy character. By incorporating it into your biscuit mix, you’re ensuring that every tender, buttery bite pays homage to the classic Red Lobster flavour.

Once your biscuit batter is perfectly blended, it’s time to elevate your cobbler. Gently pour this cheesy biscuit batter over the delicious chicken, veggies, and creamy gravy from the previous step.

Note: To keep the layers distinct and the biscuit topping from mingling with the rich gravy underneath, use a large spoon as a buffer. This technique is crucial to maintaining the perfect texture of your cobbler.

Now, here’s where we break away from the original TikTok method. The TikTok video placed the biscuit batter beneath the chicken gravy, which can make the baked biscuit soggy.

Instead, our method ensures that the final baked biscuit topping is wonderfully crunchy and flaky, creating a delightful contrast in textures.

Bake for 50-60 mins, and brush with garlic butter

While your chicken cobbler bakes, your kitchen will be filled with an enticing aroma, building anticipation for the delectable meal ahead. It typically takes about 50-60 minutes to reach perfection when baked at 350°F (180°C).

Keep an eye on it, and once the biscuit layer has turned a beautiful golden brown, you’ll know it’s time.

As the cobbler emerges hot and fragrant from the oven, it’s time to add a final touch of savoury elegance. Inside the Red Lobster biscuit mix, you’ll find a hidden gem: the garlic herb powder packet.

Mix this aromatic treasure with some melted butter, creating a delectable glaze. Brush this flavourful concoction generously over the top of your cobbler.

Now, the waiting game begins. Allow your cobbler to rest for approximately 10 minutes. During this brief pause, the flavors will meld, and the glaze will infuse every nook and cranny, ensuring that each bite is a harmonious blend of textures and taste.

When it’s time to serve, consider pairing your chicken cobbler with a crisp garden salad. The salad provides a refreshing and light contrast that beautifully balances the richness of the cobbler, creating a well-rounded and satisfying dining experience. Enjoy!
